I absolutely love Fall treats! I have always been a lover of caramel apples and turning them into cupcakes!? Yum!
In fact, when I used to teach dance I made caramel apple cupcakes for my students around the Fall season and they absolutely loved them! You can easily create this recipe with a few store-bought ingredients. One of the reasons, I love this super easy treat is the smell!! We live in Florida and the smell of Fall filled our entire house which makes me super excited. Without a doubt, these caramel apple cupcakes are the perfect treat for any Fall festival or party.
Yummy Caramel Apple Cupcakes
Ingredients
1 box Spice Cake
1 cup apple juice
1 Granny Smith Apple (peeled & chopped)
1/3 cup vegetable oil
3 eggs
10 oz bag of caramels
1/2 cup chopped peanuts (unsalted)
1/4 cup milk
Directions
First mix cake mix, apple juice, eggs, and vegetable oil altogether in a mixing bowl. *Note: You will be replacing water with apple juice. Do not follow the ingredients on the box of cake mix.
Chop apple and add to mixture.
Preheat Oven to 375 degrees
Line muffin pans with muffin liners and fill about 2/3 of the way.
Bake for 20 minutes
Drizzle Caramel Sauce over cupcakes ( lay down parchment paper for easy clean up)
Sprinkle Chopped peanuts
Place Wooden Sticks in the middle of cupcake
Caramel Sauce
Add the bag of caramels and milk to the saucepan.
Simmer on Low-medium and stir until completely melted.
