Can you believe Fall is here? Like seriously, where did the time go? The holidays are fast approaching, so you know what that means… time to plan all the family dinners, potlucks, and Friends-giving festivities! And what is turkey day without the infamous side dish sweet potato casserole with marshmallows?
This year, my husband and I are bringing a dish to the in-laws. What better dish to make than a creamy and smooth sweet potato casserole with a crunchy pecan crumble topping with pillow-soft marshmallows. This was my very first time making it and our family loved it. They even recommended it again for Christmas! This sweet potato casserole is rich and you guessed it sweet! Also, what I love about this sweet potato casserole recipe is that it contains my most favorite secret ingredient, pumpkin spice! I’ve had sweet potato casseroles but never with a pinch of pumpkin. It seriously takes it to another level. Then topping it with those sweet and crunchy pecans, ugh! Oh, and I can’t forget those cute little mini marshmallows that melt right on top.
Sweet Potato Casserole With Marshmallows
Ingredients
6 medium to large sweet potatoes
6 oz can evaporated condensed milk
1 1/4 cup brown sugar
1 cup white sugar
1 1/4 stick of butter (softened)
1 egg
3/4 cup of flour
1 package mini marshmallows
1 small package of crushed pecans
1 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
1 tsp pumpkin spice
1 tsp vanilla extract
Directions
Peel and boil sweet potatoes. Preheat oven 375.
In a mixing bowl mash sweet potatoes with a potato masher; make sure all lumps are gone.
Add egg, milk, 1 stick of butter, and vanilla. Mix until smooth, then add flour.
Gradually blend 1 cup brown sugar, 1 cup white sugar, allspice, nutmeg, and pumpkin spice and continue until well mixed.
Pour mixture into medium baking dish.
Pecan Topping
Mix 1/4 cup brown sugar, cinnamon, and 1/4 stick of melted butter in a small bowl. Add pecans and stir. Pour mixture on top of potato mixture, spread evenly. Bake for 45 minutes or until brown
Add marshmallows and bake for 15 minutes or until lightly brown. Enjoy!
Make Ahead Instructions For Sweet Potato Casserole with Marshmallows
To make ahead follow all the directions but do not bake. Store mixture in a baking dish with a lid. When you’re ready to bake, take your sweet potato casserole out of the fridge and make pecan topping sprinkle on top & follow the rest of the directions. If you’re traveling, like us I’d recommend getting an insulated thermal casserole dish to keep your sweet potato casserole warm.
