Insanely Delicious Chocolate Chip and Oat Cookie
You’ll only need a few items that i’m pretty sure you’ll already have in your pantry, which makes this chocolate chip and oat cookie so easy and fun to make. I made these on a weeknight because I was craving something sweet, so no time consuming baking here. Here’s what you’ll need:
Ingredients:
½ cup brown sugar
½ cup softened butter
¼ cup white sugar
1 egg
1 teaspoon vanilla extract
1 cup flour
½ teaspoon baking soda
¼ teaspoon salt
1 cup rolled oats
1 cup semi-sweet chocolate chips
½ cup chopped nuts
½ cup raisins
Directions:
Preheat the oven to 375. Combine brown sugar, butter, and white sugar in a large mixing bowl. Beat at medium speed, scraping bowl often until creamy. Add egg and vanilla; continue to beat until well mixed. Reduce mixer speed to low; add flour, baking soda and salt. Beat, scraping the bowl often until well mixed. Stir in oats, chocolate chips, nuts and raisins by hand. Using a cookie scooper, drop dough by rounded teaspoons two inches apart onto un-greased cookie sheet; flatten in criss-cross pattern with a fork. Bake for 8-10 minutes or until lightly browned. Set on cooling rack. Makes about 2 dozen cookies.
