Can you believe it’s February already!? Like seriously, where did the time go? Since the busyness of the holidays are over, we can kick up our feet and relax or maybe even kick-start our spring cleaning. On slow weeknights in Spring, I love to whip up this easy 4 cheese mac and cheese to satisfy our tummies.
Perfect Ooey-gooey 4 Cheese Mac & Cheese
My husband can’t get enough of his mother’s mac and cheese and since i’m married to him I had to learn had to make his favorite comfort food.. But of course with our own twist. This ooey-gooey four-cheese macaroni and cheese is so rich and creamy! Also, what I love about this is Rell and I experimented with many different four-cheese before we found one that we liked. You can mix it up with the cheeses. I was able to find the truffle cheddar at our local Aldi Stores, however we also have tried Smoked cheddar or smoked gouda works just as fine that we found at Publix. I finally found a recipe that my husband deemed worthy and I’m super excited to share with you all.
Ingredients
1 Rigatoni Noodles
¾ cup Flour
½ stick of butter
3 cups Milk
1 Cup of Mozzarella
1 Cup of Sharp Cheddar
1 Cup of Asiago
1 Cup of Truffle cheddar or Smoked Cheddar/ Gouda
3 oz of Cream cheese
Salt, pepper, garlic powder (to taste)
Directions:
Boil noodles and drain.
As noodles boil. Heat butter in a medium saucepan at low-medium heat so the butter doesn’t burn. Add flour once butter is melted. Mix butter and Flour mixture until it becomes a smooth pasty substance.
Add milk and whisk until butter and flour mixture are completely mixed and you see no lumps.
Whisk cheese in and stir until completely smooth. Add salt, pepper, and garlic powder
Add Cream cheese and continue to stir.
Combine noodles and cheese sauce. Mix until the noodles are completely coated.
Preheat oven 375
Top with additional Cheddar and mozzarella
Bake for 45 minutes or until cheese is brown on top
