When I first made this super easy, yummy Mexican street corn salad, I had never had Elotes or Mexican Street Corn. I wanted to try this summer treat so badly that I just went out and quickly whipped it up.
If you never had Elotes or Mexican Street Corn, it consists of corn, white queso cheese, cilantro, limes, mayo, and tajin seasoning. It’s a popular summer treat served on a stick. Normally, you would first slab the mayo onto the corn on the cob add the tajin seasoning, lime juice and sprinkle the queso cheese over the top.
I have no idea where to find this treat in my neighborhood and I wasn’t sure where to find the chili lime seasoning but I was able to find it at my local grocery store. Once I found the seasoning, I felt confident to achieve this delicious Mexican street corn salad.
10 minute Mexican Street Corn Salad
This salad is so quick and easy to make, you can whip it up and serve it right away or you can refrigerate for up to 24 hours and serve cold for your next gathering. I literally eat this salad straight out of the bowl.. well, I really love corn. lol, It’s so good by itself but you can also toss this on your favorite taco. You’re going to love it!
INGREDIENTS:
4 ears of corn (husks removed)
2 tablespoon of Mayo
1/2 cup of Cilantro
1 tablespoon of Tajin Seasoning
1/2 cup of Mexican White Cheese (Queso Fresco/ Cotija Cheese)
1 whole juice of a lime
DIRECTIONS:
Boil corn for 10 minutes.
Once cooled, cut the kernels off the cobs
Add mayo, cilantro, lime juice, cheese, and seasoning in a medium bowl and mix together.
Serve
*Salad can be refrigerated up to 24 hours and served cold
