Since the world has been home a lot more due to COVID-19, the hubs and I have been experimenting in the kitchen. We’ve been making a yummy batch of homemade nachos and they are cheesy and delicious! Along with the thin and crispy tortilla chips, I added a homemade nacho cheese sauce that is just too good not to share.
How to make Homemade Nacho Tortilla Chips
For the tortilla chips, I used corn tortillas. You could use flour tortillas, but the tortilla will get soggy very quickly and you don’t want that. I started by cutting the tortillas into quarters, resembling a chip. Then, fried the homemade tortilla chips in vegetable oil at medium-high heat, place them on a cookie sheet lined with foil and salt them. Thin, crispy and salty and oh so delicious.
Homemade Nacho Cheese Sauce
Similar to our mac and cheese recipe, the hubs had the great idea to make our own homemade nacho cheese sauce. All it consists of is butter, flour, milk and maybe 2-3 cheeses. I used monterey jack cheese, queso fresco, and a smudge of mild cheddar. You can also omit the queso fresco and use pepper jack instead to give it a touch of spice. I also added some chili powder and some cayenne pepper. Next time I make the cheese sauce, I’m going to toss in some canned green chiles for some texture.
How To Make Homemade Nachos
Ingredients
Corn Tortillas
1 cup Queso Fresco
2 Cups mild Cheddar
1 cup Monterey Jack
Ground beef
Salt & Pepper to taste
1 tsp Cayenne pepper
1 tsp Chili powder
½ tablespoon Cumin
½ tablespoon Garlic powder
1 ½ milk
1 ½ cup flour
2 tablespoon butter
Toppings
Shredded Lettuce
Chopped cilantro
Sliced Limes
Sour cream
Directions:
Ground beef in a nonstick skillet. Drain excess fat and add salt, pepper, cumin, and garlic powder to taste. Set aside. Cut tortillas into fours, similar to chip shape. Heat oil in a large pot on medium-heat. Drop tortillas in oil and fry for 2-3 minutes. Once you remove the chips, they’ll continue to crisp. Immediately, sprinkle salt to taste. Repeat until you’ve cooked all cut tortillas. Use a nonstick skillet, add a layer of cheese to the pan. Add a layer of tortilla chips and mix cheese and chips together until melted. (If you’re unsure about this step see video below.) Place on a plate and begin to assemble nachos. Add beef, cheese sauce, lettuce, shredded mild cheddar, sour cream, cilantro and lime.
For the homemade cheese sauce:
Heat 2 tablespoon of butter on medium heat, wait until it is semi melted. Add 1 ½ tablespoon of flour. Mix until patsy. Add milk and stir until well mixed. Add 1 cup of cheddar and other cheeses to the mixture. Stir until it slightly thickens and has a creamy sauce texture. Set aside
