Mini Caprese Bites

This Mini Caprese bites recipe is so quick and easy, that you don’t have to think twice about it. The aroma of the fresh basil and the milky-ness of mozzarella is a foodie’s delight. Yum! Growing up I’ve learned my mom loves bruschetta and started to rub off on me which is insane to me because for a while I HATED tomatoes. This seems to be the only dish I can tolerate them. There is not much to this recipe but I’d thought I’d share. Let’s jump into it:

Stars of the show

The toasts and balsamic glaze were the stars of the show in this simple recipe. Simarlialy, I thought a Caprese salad and Bruschetta were pretty much the same entree, even though are prepared differently. Here’s a little background on both:

Caprese salad -is a simple Italian salad, made of sliced fresh mozzarella, tomatoes and sweet basil seasoned with salt and olive oil.

Bruschetta- is an antipasto (starter dish) from Italy consisting of grilled bread rubbed with garlic and topped with olive oil and salt. Variations may include toppings of tomato, vegetables, beans, cured meat, or cheese

All you need is Bruschetta toasts, fresh whole basil, fresh mozzarella and balsamic glaze. I cut the mozzeralla, tomatoes and basil in bite-sized pieces. I started with mozzarella first, then basil, then tomato. Lastly, I drizzled with a Gia Russo Balsamic Glaze, a pinch of salt and some olive oil for some flavor. And that’s it! So good, so easy, so yummy!

Easy Mini Caprese Bites

This is a quick and easy recipe that can satisfy your craving for something fancy in no time. 

  • 1 package or bunch Whole Basil Leaves
  • 1 8 oz Gia Russa Balsamic Glaze
  • 1 4 oz bag Asturi Bruschettini Snack Size Toasts
  • 1 package cherry or grape tomatoes
  • 1 8 oz Fresh Mozzeralla Ball
  • Olive Oil
  • Salt
  1. Prepare mozzarella, tomatoes, and basil by cutting into bite-size pieces.

  2. Plate Bruschettini Toasts and stack the ingredients. Lay mozzarella first, then basil, and lastly tomato. 

  3. Drizzle olive oil, balsamic glaze, and salt over the top.

This is the perfect snack for when you just feel like being fancy smancy. 🙂 Enjoy!
